4 for the 4th: Red, White, & Blueberries


This is point of summer where one of two things happen, 1. Realizing that there almost two full months of bikini season left, you continue to eat healthy, non-bloating foods, or 2. You indulge in high fat, high calorie, low nutritional barbecue fair and overdo it on the sugary drinks.

Instead of serving a sugar-laden cake at your 4th of July gatherings this year, try serving a raw, vegan, no bake dessert that will keep you feeling cool.

Red, White & Blueberries

  • 3 Bananas
  • 1 Pint of strawberries
  • 1 Pint of blueberries
  • 1/2 lemon, squeezed
  • 1 glass (or foil) baking dish

Slice bananas and strawberries in thin slices and assemble directly in the pan in alternating rows, leaving a small square on the left side. Add blueberries to the square, a squeeze fresh lemon juice over all of the fruit. Refrigerate until ready to eat.
