Seeing the lyrics above, this recipe is a literal translation from Beyonce’s very revealing song.
The dish retains all of the alcohol from the wine, making it an appropriate appetizer or dessert, and reminds me a little of mulled wine.
If it’s peach season, definitely swap the frozen fruit for fresh, but since it’s still chilly back East (and oddly in California), frozen may be the best option for the next few months.
I love this dessert because it’s not too peppery or sweet, and the peaches mellow out the alcoholic bite of the wine.
My only regret: not making more. Cheers!
Peaches with Red Wine Drip
- 2 cups medium-bodied dry red wine (I used Côtes du Rhône)
- 1/8 cup stevia
- 1/2 tsp. grated nutmeg
- 1/2 tsp. grated ginger
- 1/8 tsp. black pepper
- 1 10 oz. package frozen peaches (or 4 fresh)
Heat peaches in a small saucepan on low until defrosted and soft. Pour wine in a glass bowl. Add sugar, nutmeg, ginger and black pepper, and stir.
Add wine mixture to the peaches and continue to heat on low until sugar is dissolved – being careful not boil.
Remove from heat, cover with plastic wrap and chill well. Serve cold in tall wine glasses and garnish with a mint sprig.
Today’s Activity: Snuggle up next to a crackling fire and enjoy the last few weeks of winter (and red wine season).
